The Mangalitza has been called the Kobe beef of the pig world, and the comparison is not an exaggeration. Just as Wagyu cattle produce beef of extraordinary marbling and depth through slow growth and exceptional genetics, the Mangalitza produces pork in a different league to anything reared at commercial speed.
A commercial pig is ready in five or six months. Ours take the best part of two years.
This box is a quarter of one of those animals. It's a pre-order: we take orders until we have four, each one a quarter of the same pig, and only then is that pig sent for butchery. Because it's prepared to order rather than kept in the freezer, your box arrives fresh — never frozen — for outstanding flavour and texture.
